The perfect dish to be the star of the show at the table. Just look at them, mouthwatering 🤤
Ingredients:
• 500g Baby PotatoesÂ
• 4tbs Olive oil
• 2tbs Garlic powderÂ
• 100g Mozarella cheeseÂ
• 50g ButterÂ
• Handful of fresh parsleyÂ
• 1tsp of chilli flakesÂ
• Salt and pepper to tasteÂ
• Oil to grease the oven tray
Method:
Peel the baby potatoes and parboil. You can keep the skin on if you prefer.Â
Once boiled, drain the potatoes and put them in a bowl.Â
Add the olive oil and mix well.Â
Place some foil on an oven tray and grease it with oil of your choice.Â
Place the potatoes on the foil. Using the bottom of a glass, press down on the potatoes until they are squashed.Â
Place in the oven on 220c/gas mark 7 for 30 mins or until crispy and golden.Â
In a separate bowl, melt the butter and add the parsley, chilli flakes, salt and pepper to taste then drizzle over the cooked potatoes and sprink the mozarella cheese.
